Haitian Pikliz

Makes approximately 1½ cups


Pikliz is a staple condiment in every Haitian household. Perfect for tacos, roast meats, fried fish, sandwiches, roasted vegetables, and so on.


INGREDIENTS:

4½ ounces (120 gr) white cabbage
1 medium carrot (50 gr)
1 large shallot
3 Scotch Bonnet peppers
¼ teaspoon brown cane sugar
10 cloves; 8 allspice berries
½ cup (100 ml) apple cider vinegar
Salt and freshly ground black pepper


INSTRUCTIONS:

1. Slice cabbage into thin strips and cut the carrot into thin batons. Slice the shallot lengthwise into thin slices and finely chop the Scotch Bonnet peppers.

2. Place all the ingredients into a bowl and mix well. Season to taste with salt and pepper.

3. Transfer the pikliz into a sterilized jar and store in the refrigerator up to 2 weeks.
